VITAMIN A FOR WINTER MONTHS Also known as retinol, vitamin A plays a vital role in two things that are essential if you’re going to try and feel healthier in winter. White Bean & Kale Minestrone Soup Enjoy this Vitamin A rich recipe which provide greater than 50% of your daily value for vitamin A per serving! Ingredients • 2 tablespoons canola oil • 1 cup frozen chopped vegetable blend for sea soning (onion, celery, bell pepper) • 3/4 cup chopped carrots • 2-1/2 cups water • 1 can (14.5 oz each) Diced Tomatoes, undrained • 1 can (15 oz each) Great Northern beans, drained • 1-1/2 cups Tomato Sauce • 2 cups Chopped Kale • 1/2 cup dry small pasta shells, uncooked • Grated cheese of your choice, optional

Directions

• Step one Heat oil in large saucepan over medium-high heat. Add veg etable blend and carrots; cook 3 to 5 minutes or until tender. Add water, undrained tomatoes, beans and tomato sauce; stir to combine. Bring mixture to a boil. • Step two Add kale and pasta; stir to combine. Reduce heat and sim mer 15 minutes or until kale and pasta are tender, stirring oc casionally. Serve with Parmesan cheese, if desired.
