Chick-pea Brownies

These delicious brownies feature a secret and high pro- tein ingredient, chickpeas! The chickpeas are what make these brownies gluten-free and fudgy. Toss them in al- mond butter for added protein. Almond butter is a great source of heart-healthy monounsaturated fat, with 5.2 grams per tablespoon. Additionally, almond butter has four times more vitamin E than peanut butter. INGREDIENTS • 1 cup canned Chickpeas, drained solids • 1/2 cup Almond Butter • 1 large whole egg • 7, pitted dates • 1/4 tsp Baking Soda • 1/4 tsp Baking Powder • 2 tsp Vanilla extract • 1/2 tsp Salt • 1/3 cup Baking Chips, Semi-Sweet Chocolate • 5 sec Cooking Spray, Olive Oil DIRECTIONS 1. In a food processor, blend chickpeas, almond but- ter, egg, dates, baking soda, baking powder, vanilla and salt. 2. Fold in the chocolate chips. 3. Lightly coat a rectangular cake pan with cooking spray 4. Use a spatula to spread the mixture into a single layer. 5. Bake at 350 degrees Fahrenheit for 20 to 25 min- utes 6. Cut into six squares. Sprinkle a pinch of sea salt on top of the squares.
